Making Chicken Pie

I made a chicken pie yesterday.

  I imagine that doesn’t sound like a big deal. However, to the people in my family, it is a pretty special thing. See, I don’t make chicken pie all that often.  I make the whole thing from scratch-homemade pie crust, fresh vegetables, thick gravy. I’m a rather messy cook, so by the time I’m done, I’ve got flour everywhere, at least four pans to clean, and assorted cuttings boards to wash up, too. Making this dish takes me a while-usually a couple of hours from the time I pull the margarine out of the refrigerator to when it’s served on a plate.

Because of all that, for me, making a chicken pot pie really is a labor of love. I make it for my kids their first evening home from college. Or when we have company for dinner. Or when a friend is sick.

 Two days ago I found out that Helen, a friend of mine from church, is doing poorly. Her cancer has spread, and she’s weak and exhausted. For almost ten years I volunteered a few times a month at our church’s ‘Welcome Desk’. Helen always did the shift before me. Helen’s old enough to be my mom, and she’s the nicest lady ever.  So when I was asked if I could bring her a meal this week, of course I knew what I had to make!

 I have to say I had the nicest afternoon making that pie for Helen. Doing something for another person is such a gift, I think. While it was baking, I decided to make her cookies too. 

 Last night, my husband helped me take the dinner to Helen’s house. We quietly set the items down in her kitchen and went out the back door. Then came home to another chicken pie! I decided if I was making one pie today, I might as well make two. My husband was very pleased.  I told him it was no trouble…because, you know, I like him a lot too. <g>

    I love to make tatertot casserole for my boys. They request it often and makes a nice meal on a cold snowy day.

    I was already hungry and your chicken pot pie sounds delicious. Hi Shelley

    I don’t cook very much and I usually can’t choose just one thing when asked for favorites but today Iwould have to say one of my favorite things to cook is pot roast.So easy to just put the meat in the oven or crockpot than later add the vegetables. Then make beef stew from the leftovers. This was also how my mother always did it when I was a kid at home.

    I just reread your post and you said special occasions. That one is easy to answer. For New Years I like to cook country ribs in sour kraut, mashed potatoes, cranberry relish (I cheat and buy it already made) and noodles (I cheat again and buy the frozen Reames brand-I just never got the hang of making homemade noodles and Reames are just as good- better than mine.)

    Shelley, I love making homemade chicken and dumplings. First of all if everyone is home it is a family affair. I mix the eggs with the broth and flour while my husband boils the chicken and picks it off the bone. My youngest son likes to cook so when i make the dumplings he seperates them and puts them in the pan so they dont stick together. My other son is a talker so he stays in the kitcen and keeps everyone etertained with his stories and guitar playing.

    We do tis for holidays, when the kids are home from college, our church ladies group fundraisers, and for friends in need (my girlfriend recently had surgery and couldnt cook). Its a great way to share with the kids and husband, and bless others as often as possible.

    (If this question was for a contest entry–i didnt read that far, pleaase do not enter me. I have already won and wouldnt want to take the same blessing away from someone who hasnt). Sorry about thw typing…typing on my nook and its not that easy lol.
